I’ve been in love with Wild Planet tuna for quite awhile now! It’s pretty impossible to come by in Europe so when they reached out and offered me the chance to try their new product I JUMPED on it! Wild Planet Organic Chicken Breast in a can….stay with me…I, too, was a bit worried about canned chicken. But Wild Planet has high standards for their products and I knew it would be nothing like the canned chicken I’d had in the past.
I’m excited to say that the Wild Planet Organic Chicken Breast is DELICIOUS! I’m only upset that I can’t order it regularly while in Europe. It makes for a quick and easy protein source to add to any meal! Fully cooked chicken breast, ready to go! I made a quick and tasty cheddar buffalo chicken stuffed baked potato, if you try it out let me know what you think!
Cheddar Buffalo Chicken Stuffed Baked Potato
-1 can Wild Planet Organic Chicken Breast
-1 TB sharp white cheddar cheese, diced
-1 TB sharp cheddar cheese, diced
-1 green onion, chopped
-1 tsp pink himalayan salt
-1 tsp pepper
-1 tsp garlic powder
-2-3 TB Frank’s Red Hot Sauce
-1 large yellow potato (or russet)
Poke several holes in your potato and microwave for 5-7 minutes. Once fully cooked, slice in half lengthwise and scoop out some of the potato, leaving enough behind for the skin to keep its shape. Add the cooked potato, chicken, seasonings, 1/2 of the chopped green onion and white cheddar to a bowl and mix thoroughly. Add the Franks Red Hot Sauce and stir. Take the filling and stuff the potato skins, adding the sharp cheddar and rest of the green onions as garnishes. Serve and enjoy!
