When summer rolls around, I can’t keep away from the fresh fruit! Peaches, pineapple, cantaloupe, and pears all make their way into my fridge! I found myself with pears and some frozen blueberries. I don’t know about you but I find frozen blueberries tend to be more sour than sweet. So when Dolcedi sent me their low glycemic sweetener made from apples, I thought it would be perfect for use in a fruit compote!

Pear and Blueberry Compote
-4 Ripe Pears, sliced lengthwise
-1 cup Frozen Blueberries
-1.5 TB of Doceldi
-1.5 TB Salted Butter
-1 tsp Cinnamon
In a saute pan on medium heat, melt the butter then add the frozen blueberries and cook through until soft and they release their liquid. Add in the Dolcedi and stir until combined. Add in the sliced pear, cover with a lid and cool until soft, about 5 minutes.
Enjoy with fresh whipped cream. Or use as a topping for cottage cheese or ice cream!
